CHEF PAUL HARRY TOUSSAINT

EXECUTIVE CHEF AND OWNER

Born in Jacmel, the cultural capital of Haiti, Paul Harry Toussaint thought he would become a lawyer when he arrived in Canada. However, he decided to leave law school to pursue his true passion: gastronomy. After culinary studies at Montreal's Collège LaSalle, Paul worked his way up through the city's best kitchens, including the famous Toqué restaurant. 2013 marked Chef Paul's return to Haiti, where he teaches at the École Hôtelière and acts as a consultant for some of the biggest names in the hotel industry. It was at the Asù restaurant in the luxury Karibe hotel in Port-au-Prince that Paul was finally able to give free rein to all his talent. As Asù's executive chef, Paul develops a unique style. Upon his return to Canada in 2017, Chef Paul joins the team at Agrikol restaurant, as executive chef.

A must for Montrealers and international celebrities alike, Agrikol is a celebration of Haitian gastronomy and a tribute to the country's rich culture. In 2019, Chef Paul is adding his name to those of other top Montreal chefs at the new Time Out Market to continue introducing gourmands to Haiti's gastronomic treasures. With his latest project, the Kamúy restaurant in the heart of the Quartier des spectacles, Chef Paul is positioning himself as a true ambassador of Haitian and Caribbean culture. For him, seeing Kamúy set up next door to Normand Laprise's Brasserie T, with whom he started out in this field, is a sign of how far he's come in promoting Haitian culture in the metropolis.
